Cây lúa có tên khoa học là Oryza sativa L. thuộc họ cây một lá mầm,
thân cỏ, sống trong vùng đất ngập nước. Hiện nay có hơn 120.000 giống lúa,
được trồng khắp nơi trên thế giới. Ở Việt Nam và các nước ở châu Á lúa được
trồng chủ yếu là Oryza sativa, đây là loại thích hợp với điều kiện khí hậu và thổ
nhưỡng nhiệt đới, nhiệt độ phát triển tối ưu từ 30oC đến 34oC. Ở Việt Nam, lúa
được trồng chủ yếu ở ĐBSCL, Đồng bằng sông Hồng và các đồng bằng ven
biển.
Lúa gạo là một một trong những loại ngũ cốc quan trọng nhất, nó là
nguồn lương thực cho hơn một nửa dân số thế giới. Ở châu Á, gạo thường được
sử dụng để nấu cơm sử dụng dạng nguyên hạt, và nó đóng góp 40 đến 80% năng
lượng mà con người cung cấp hằng ngày (Singh et al., 2005; Hossain et al.,
2009; Cai et al., 2011). 
Cấu tạo chính của hạt lúa gồm 4 phần chính là vỏ trấu (hull), lớp vỏ cám
(bran layer), nội nhũ (endosperm) và phôi (embryo).
